Chickpea Salad
1 can garbanzo beans (chickpeas), rinsed and drained
1/2 avocado, diced
1/2 green or red pepper, diced (I used a little of both)
1 roma tomato, seeded and diced
1 clove garlic, minced
1 lemon, juiced
1 tbsp parsley
2 tbsp olive oil
(You can also add onion which I didn't do)
Combine all ingredients and chill until ready to serve.
