-Place the pork roast in the crock pot and cover about half way with apple juice, cook on low for about 6 hours.
-Peel and slice two apples, coat with cinnamon and brown sugar
-Drain most of the juice from the crock pot and added the apples and about a cup of dried cranberries, cook on low for another 2 hours
I also made some mashed sweet potatoes and added a little brown sugar, no butter :) My husband actually loved this so much, he took one bite and looked at me and said, "You can eat this on your diet?!"
