Cooking Day

I managed pretty well the past two days! I walked out of Walmart on Wednesday night, $120 later, and ready to try out some of the recipes I found! Yesterday I started the day with throwing together this taco soup recipe. I've used it before and didn't have to make any changes. I just made sure to use a homemade taco seasoning since there may be soy in the packet kind. Here's the recipe for the taco seasoning I used:
 
Homemade Taco Seasoning
1/4 cup chili powder
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 1/2 tsp cumin
1 1/2 tsp oregano
1/2 tsp paprika
1 tsp salt
1 tsp pepper
Mix all the ingredients above in a small bowl. Keep fresh in an air tight container for up to 6 months.
Double or triple recipe as needed. Use 2 Tbsp. for 1 packet of taco seasoning.


 

I also kicked out a split pea soup recipe from a book called The Eat-Clean Diet Cookbook. Here's a picture of the recipe, I don't want to type it all out :) I didn't have celery so I couldn't include that and I didn't have turkey so I used cubed chicken breast instead. Overall, not a bad recipe. It did take a lot longer for the peas to get soft, like two hours instead of one.




I made a taco salad for lunch with red and green peppers, tomato, and ground beef (seasoned with the taco seasoning recipe above) and the cilantro lime dressing from this recipe. I was bummed my avocados weren't ripe yet but it was still a great salad. The dressing was amazing!

  1. All of these sound amazing! Do you have other 'allergy-free' recipes that you have tried for casseroles?
